Procyon Red Wine 2020
Procyon is the second brightest star rising above the horizon.
Varietals: 80% Syrah and 20% Grenache.
Aging: 24 months in new French oak barrels.
Alcohol: 13.7 %
TASTING NOTES:
Appearance: It has a striking plum red color with a transitional hue, it is clean and bright with a medium-high color intensity.
Nose: Fragrant aromas of hibiscus, ripe red and black fruits; elegant notes of tobacco, dark chocolate, vanilla and leather; intense aroma of roasted chestnuts and caramel.
Palate: A medium-high attack is perceived, it has firm tannins, a great body, acidity and alcohol in perfect balance, it has a long permanence.
Pairing: Goes well with game meats such as duck or pheasant, mushroom risotto, medium-intensity cheeses or pasta flavoured with black truffle.
Decanter or uncork 30 minutes before enjoying.
Serving temperature: 18 to 20 ºC.
