We are a group of passionate family owners whose retirement dream was to build a boutique hotel around a vineyard. We made our vision a reality, here in the Guadalupe Valley. During our first visit, we fell in love with the climate, the people, the landscapes and, above all, the great quality of the unique wines of this region. Mexican hospitality has always been at the heart of our wine tourism project, inspired by our parents' love of wine, the delicious food, and most importantly, the moments shared with loved ones. THE VINEYARD

El Cielo has 95 hectares of vineyards growing 15 different grape varieties. There are 35 hectares in the Villas area in the Guadalupe Valley, 30 more in San Jacinto and 30 in Ojos Negros. This represents a density of more than 3,850 plants per hectare, for a total of 85,000 vines. The moist, clay-rich soil is irrigated with high quality, low sodium water from our own well. We also have fruit, organic vegetable, herb, and flower gardens, as well as 700 olive trees.

VARIETALS

We have planted 15 grape varieties, including the traditional Cabernet Franc, Sauvignon Blanc, Chardonnay, Merlot, Tempranillo, Zinfandel and Grenache. We also have new varietals that allow modern blends such as Malbec, Syrah, Nebbiolo (which grows very well in the region), as well as the more recent Sangiovese.

THE WINERY

Our wine cellar is built with energy efficiency in mind. This is why the cellar is underground, the roof and walls are insulated, the ceilings are tiled, and we have LED lighting and plasma motion detectors with automated systems. In 2015, our vineyard was recognized by the government of Ensenada as the 1st Eco-Responsible Company.

ORGANIC GARDENS

We seek the highest quality in our products and spices for our dishes. This has led us to take advantage of our own fields and plant organic gardens, which have varieties of vegetables including: Chiles, cabbage, cilantro, celery, various types of lettuces, as well as figs, lemons and oranges.

THE TANKS

The winemaking process is facilitated by gravity within our grape selection equipment, and has a state-of-the-art pressing system. We have 29 cylindrical-conical fermentation tanks made of stainless steel, imported from Spain. This form offers greater contact with the skin for a long and slow extraction.

THE BARRICAS

For the aging process, we use the most refined barrels made of French, European and American oak; to obtain softer, smoother and better tasting wines. The barrels allow our wines to be stored for a long period of time, maintaining exceptional quality.

OUR WINES

Our carefully crafted wines use different concepts and varietals to create new blends. Generally robust and with a strong character, our four lines of wines: Astros, Astrónomos, Constelaciones, and Estrellas (Colección Alta Gama) are designed to surprise novice palates as well as expert wine enthusiasts.
