She is the first woman astronomer and mathematician whose life is well documented. She was a prominent thinker of the Neoplatonic school of Alexandria (4th and 5th centuries AD), where she taught philosophy and astronomy.
Grapes: 80% Chenin Blanc, 20% Chardonnay
Elaboration: Traditional Method.
Breeding: 32 months of rest on its lees .
Alcohol: 12 %
Serving Temperature: Between 8° to 10°C.
Tasting Note:
Appearance: It has a beautiful straw color with silver sparkles, a fine and continuous bubble.
Nose: Fragrant aromas of white flowers and fruits such as green apple, pineapple, peach, pear with a note of lemon grass and acacia honey as well as pastries and roasted coffee derived from its prolonged second fermentation in the bottle.
Taste: An elegant and subtle attack on the palate, it has a firm and fresh acidity, it is a round and complete wine with a long aftertaste.
Pairing: Ideal as an aperitif and to pair with fresh fish and seafood, roast suckling pig, mole poblano, beef tartar, sushi, medium-intensity cheeses and desserts based on citrus and white fruits.
