Once the grapes have reached their exact point of ripeness, it is time to begin vinification. This happens once a year, during the summer, and at
El Cielo we celebrate it during the month of August.
Mexico has grown a lot in all aspects related to wine.
We have more wineries, more technology, more consumption and, above all, more proposals for white,
rosé and
red wines proudly produced in our country.
The grape harvests are events where wine lovers , celebrities, businessmen, sommeliers and experts on the subject meet to have and enjoy a great party in the Mexican vineyards.
Just as in the past, during the
Grape Harvest you have the opportunity to tread the grapes traditionally, as well as to visit the winery facilities (winemaking area, vineyard and cellar), taste the wines and in some cases enjoy delicious lunches or dinners with wine pairings.
The fields provide us with fruit once a year. The winemaker makes use of his knowledge and the technology at his disposal to offer great wines, some for immediate consumption, others that will undergo a barrel aging process.
